Pete Nittoli knew in 1939 that only coal fires burn hot and dry, and could give his famous “tomato pies” their award-winning crisp, charred, chewy crust.
When we brought our Nittoli family recipe from our homeland, we knew we had to recreate our family's original oven, brick by brick. Even in today’s fast-paced world, we knew that once our customers had a taste of true italian tomato pies, they would be willing to wait a few minutes longer for our family secret recipe to be baked to perfection. So that’s how we do it today.
